Shrubs, also known as drinking vinegars, are concentrated syrups used in beverages. They have an unique sweet, acidic taste. Shrubs were popular in colonial America as a way to preserve berries for the winter, a tradition that we are continuing at our farm.
For our shrubs, we use organic Little Hill berries, apple cider vinegar, and honey (as opposed to refined white sugar which is typically used in shrubs) from bees kept at our farm by Northstar Apiaries in Northfield. This is a truly local drink.

How to Enjoy Shrubs
Shrubs are a great way to liven a glass of water. A simple way to use shrubs is to combine 1 tablespoon with 5 to 6 ounces of water or sparkling water (such as La Croix). Shrubs have also become quite popular in cocktails and add a fresh zing to mixed drinks. In addition to enjoying shrubs for their unique flavor, many people enjoy drinking shrubs as a way to access the health benefits of apple cider vinegar in a tasty beverage.
